Weekly Menu



RECAP

This week went pretty well, we especially enjoyed the poppy seed chicken and the green enchiladas!  An easy trick is to purchase a rotisserie chicken (especially at Costco because they are usually only $4).  Debone it, shred the meat, and you've got enough meat for probably several meals.  And a lot of times I'll add in more veggies and thin down on the meat content and that makes it go further too.   This particular week, I cooked and shredded the chicken for both meals at one time and that really helped to speed up the prep time the day of the meal.  


 Poppy Seed Chicken

Poppy seed chicken is one of family's favorite meals.  This time I stirred in some frozen peas before baking and they were a perfect addition!




Green Enchiladas
Lots and lots of spinach is the key to this meal, 
but it the flavor is so rich that the spinach isn't overbearing.

Monday - Grilled Chicken Salad (which I didn't get to make on Saturday as planned)
Tuesday - Spaghetti
Wednesday - Fish sticks 
Thursday - Stir fry Chicken
Friday - Calzones
